Mi querido Ecuador...como te extrano. 
My dear Ecuador...oh how I miss you.

There is one food that brings Ecuador back to me no matter what, patacones (fried plantains). It's a major carb staple for Costal Ecuadorians and can be eaten for breakfast with a hot chocolate (yes even in 95 degree weather and 70 percent humidity. whoa.). As a side for lunch or dinner...or as dinner. I had them as a side last night with this soup while enjoying the torrential drown pours of this elongated monsoon season.
